Brie Sandwich with Caramalised Red Onions

A posh sandwich bursting with flavours, using Brie cheese and caramelised red onion which are a classic combination and ideal for your next picnic.

Assemble the sandwich at your destination to avoid the paninis becoming soggy.

1 red onion
olive oil
1 Tb balsamic vinegar
pinch sugar
unsalted butter
2 panini / ciabatta rolls
handful wild rocket
salt and freshly ground black pepper
100g best-quality brie cheese

Peel the onion and use a sharp knife to halve and thinly slice. Heat a drizzle of olive oil in a pan and cook the onions over moderate heat until softened and starting to caramelise. Lower the heat and continue to cook until they become dark and jammy, approximately 15-20 minutes. Add the balsamic vinegar and a pinch of sugar and cook until the moisture cooks out. Remove from the heat and allow to cool.

To assemble the sandwich, butter the paninis. Dress the rocket in a little olive oil and season with salt. Pile the rocket on one half of the paninis. Slice the brie cheese and lay out on top of the rocket. Top the brie with the caramelised red onions and crack over the black pepper.
