Corn on the Cob in Lime and Chili Butter
Serves 2-4
Are you struggling for ideas for side dishes at your next BBQ this summer? I just love corn-on-the-cob and think it’s such a fun dish to serve up. Here, I made a flavoured butter using cayenne pepper and lime juice: so delicious! Just remember to leave the butter out to soften at room temperature for a few hours before mixing all those lovely ingredients in.
50g softened butter
1/8 tsp cayenne pepper (or adjust to your liking)
1 TB lime juice
salt
4 corn on the cob
chopped coriander, to finish
Place the softened butter into a bowl and add the cayenne pepper and lime juice. Season with a little salt. Mix well to combine using a mini whisk and set aside.
Boil the corn on the cob and drain well. If you are BBQing, finish them on the grill to get lovely char-marks on them which will also enhance flavour.
Toss the cooked corn in the flavour butter, then use a sharp knife to finely chopped coriander to scatter over as a great garnish.
